What are some healthy lunches I could pack?

Question by never SHOUT never: What are some healthy lunches I could pack?
I won’t have a microwave or fridge, though I can use an insulated lunch box or thermos. Also, my mornings are always pretty rushed, so I want something that doesn’t involve too much preparation, or can at least be made the night before.

I really like fresh fruit and vegetables, but I’m not always able to get to the store for that stuff.

Any kind of sandwich.
Cobb or chef salad.
Boiled eggs.
Soup in a thermos with baguette bread slices.
Pita pockets, lined with cream cheese and stuffed with sliced veggies and spourts
