Question by pdw901: I don’t really know how to cook and need to know a few things I can make for easy dinners – any suggestions?
Spaghetti is about all I can do right now. Looking for things a little more adult than mac and cheese and ramen noodles, but nothing too difficult either.

What about making eggs? They are very versatile… you can scramble with some swiss cheese, spinach, and ham. Or, better, yet, with goat cheese and proscuitto. A nice salad on the side. You can make an omelette with just about anything you like in it. Baked or roasted potatoes are pretty easy, too. Casseroles are very easy. Especially when they involve using Campbell’s condensed soup or Bisquick. I would also recommend getting a slowcooker and picking up a few tried and true cookbooks from reliable sources, such as Betty Crocker, The Joy of Cooking, and Fanny Farmer. Rachael Ray’s recipes are pretty easy too and can help you to at least get started with learning to cook. Once in a while turn on the Food Network – I learn something every time I watch… Good luck!

If I get home late, an easy dish to make is backed fish fingers and chips.

    Pre-heat the oven to 190 deg C
In a baking tray pour a portion of frozen chips.
Put a baking rack in the tray and put the fish fingers on that.
put it in the oven for 20 mins. Enjoy…

Try your hand at cooking rice.
Doing it in a microwave is easy.
If you do not have a “rice cooker” just use a plastic or glass dish with a loose fitting lid.
Place raw rice granules in dish, rinse well and refresh water.
Cover rice grain with twice the amount of water.
Place in Microwave for about 20 minutes on high.
Check periodically to add water if needed.
Once you can cook rice, then buy shrimps.
    Defrost under running cold water.
Place in pot and cover with water and a pinch of salt
Not too much, just to cover…
    Bring to the boil.
Remove from heat and let stand for 5 minutes.
Now fry sliced onions in a little cooking oil in a pan.
Add slices of tomato and a pinch of salt.
Stir fry until tomato is reduced and onions are golden brown.
    Remove from heat.
    Add shrimps and stir.
Serve on a bed of rice.
    Enjoy…

    Have you tried Lasagna?

    Ingridetnts:
    Lasagna Noodles
    2-3 pounds Ground meat
    2 cups Cottage cheese
    2cups of Motzerella cheese
    3 cups of cheddar cheese
    1 Bottle of Ragu sauce
    2 eggs
    Salt and pepper

    Directions:
Cook you meat until its all brown. then strain the meat and add sauce. while the sauce is cooking .
Grab a big boal and mix eggs cottage cheese and, cheese.
Once all that is done. grab a 18×9 baking pan and layer a small amount of meat on the bottom just eanugh to coat the bottom.
Then place your noodles verticaly and if there is eanugh space left you can use extra noodles to fill in those empty spaces.
then layer your cheese on thop of the noodles cover evely over the noodles and
Place more meat evenly and lay your noodles and cheese.
At this point you should have two layers .
So the last step is to cover the top of the cheese with the meat grab your aluminium foil and secure tight all around the baking pan and Place in the oven for about 50 minutes. at 350 degrees.

When the time is up take it out of the oven lift the aluminium foil and stick a fork in in the middle and if you notice that the noodles are fully cooked then your job is done I hope this helps. Note: if you dont like cottage cheese believme its only there to hold it togethere.

Well, If you’re just cooking for yourself you can pack the rest for lunch or freeze it for another day.
Chicken breasts are very easy to cook and you can use them in Italian, Caribbean or Oriental dishes simply.

For a quick “chinese dish” go to walmart pick up a pack of stir fry veggies for $ 1.50, a pack of chicken breasts (the most 4 chicken breasts per 16oz pack of veggies) a cup of rice.

to cook rice boil one and one half cups of water then add one cup of rinsed rice. (rinse till water runs clear.) Return to boil then reduce heat to low and cover for 10 minutes. Take off heat and leave covered for another 5 minutes while it fluffs up. To make rice really fluffy soak for 10 minutes in cold water before cooking.

Cut chicken breasts into thin strips (they will cook faster.)
Season with Garlic powder, chopped/grated fresh garlic and grated fresh ginger.

    Heat pan or wok.
Pour about 3 tablespoons of vegetable oil and coat pan/wok.
Immediately add 3 tablespoons Soya/soy sauce and add seasoned chicken. If you have Sesame oil add about a tablespoon for flavor. Stir briskly until browned. Cover and lower heat for 10 minutes. Add pack of veggies and raise heat to medium and cook uncovered for another 10 minutes.
Poor on top of rice and enjoy.

    Chicken Parmesan.
    2 eggs
    1/4 cup milk
    Italian seasoned bread crumbs
    1/2 cup grated parmesan
    butter/Olive oil
    1 lb mozzarella cheese
16 oz jar of Spaghetti Sauce
salt, pepper, garlic powder to taste

    rinse chicken breasts, pat dry.
put plastic wrap over each breast and pound to tenderize.
whisk eggs and milk together in bowl and individually dip each breast to coat. Sprinkle lightly wiith salt, pepper and garlic powder. (remember the bread crumbs are seasoned.) Then coat each side with Italian seasoned bread crumbs & Parmesan cheese and set aside.

    Pre-heat Oven to 350°
Coat pan with Olive oil (extra virgin has most nutritional value) and align chicken breasts.
Slice mozzarella cheese and place over each chicken breast.
Pour Spaghetti sauce over chicken, cover with foil and bake in oven for 30 minutes and voila!
(Since you know how to cook spaghetti I left that out :o )

For some Puertorican style chicken stew (carne guisada)
You can take a pot, after heating it for a minute add olive oil, half a chopped onion, half a head of garlic (6 bulbs or so), salt, pepper, achiote(a pinch’s worth of grains for color and nutty flavor)/annato (or to make it easierr buy Sazon and use two packets.) Add chopped cilantro. Mix quickly. Add a can of black beans + half a cup of water, a can of tomatoe sauce (8 oz.) and the chicken breasts cut cubed style. Stir and heat to a boil then reduce heat to medium/low and cover. Cook for 40 minutes so that’s it’s tender. You can eat on top of rice or if you want add potatoes to the dish (2 potatoes sliced in fours) and have it like stew.
Oh yeah, for this dish you’ll need
    Chicken breasts 4 pieces
    1/4 cup chopped cilantro/Chinese parsley
6 bulbs garlic or less if you want
    achiote granules
    salt n pepper to taste
    half onion chopped
one 8 oz can plain tomato sauce
    2 potatoes peeled and cubed
    2 tablespoons Olive oil
Note: Look for Goya Sazon packets in your supermarket’s “ethnic” section. It’s great. If you don’t want to chop all those onions, garlic and cilantro then buy Goya Recaito or Sofrito. It contains bell peppers too and basil. Just 2 tablespoons of this goes a long way.
