What are some healthy lunches and dinners I could make for myself?

Question by …: What are some healthy lunches and dinners I could make for myself?
I’m in college and I’m not into cooking very much, but I want to eat healthy. What are some good ideas for healthy meals that don’t take long amounts of time and money? Even some names of recipes would be good so that I could look them up. Thanks! :)

Angel Hair Primavera

1 1/2 lbs vegetables, julienne cut*
1 1/2 lbs angel hair pasta
1 cup extra virgin olive oil
2 tablespoons fresh garlic, chopped
1/2 cup chicken stock
4 tablespoons fresh basil, julienne cut
3 tablespoons sun-dried tomatoes, finely chopped
2 tablespoons fresh parsley, chopped
2 1/2 ounces parmesan cheese, grated
2 teaspoons lemon zest
1 sprig fresh parsley, washed (garnish)

Directions

1)Heat a large pot of water over a medium heat until water boils. Place vegetables in steamer and steam until cooked al dente.

2)While vegetables are steaming, cook pasta as per instructions from manufacturer.

3)Place a large saute pan over a medium heat. Once pan is hot add olive oil and garlic. Gently saute garlic. Add a good quality chicken stock to the pan and bring to the boil.

4)Strain pasta and vegetables and add to saute pan. Add fresh basil, lemon zest, parmesan cheese, sun-dried tomatoes and parsley. Toss pasta thoroughly. Garnish with a sprig of parsley.

5)Primavera vegetables: fresh snow peas, zucchini, red bell peppers, broccoli, carrots….anything you like really.

  1. So much.. <3 says:

I’m in the same situation. I usually try to suspend my eating to small meals a day =). And make them healthy ones.

My favorite low cal low fat recipes are…

Thai Chicken. You basically bake your chicken add Thai seasoning, and put it over low carb pasta [Noodles.]. Yum.

Or if your into meat, any type of meat is good for you really. Just stay away from fat chunks :P .

I get alot of my recipes from Foodnetwork.com they have low cal recipes & low fat to make =] Soo good.

Oh and. For snacking if you like any type of cookies, make them the original way but with Splenda instead. Cuts about 42 grms of sugar and cuts a ton of fat as well. Also using low cal spread instead of pure butter does the trick too. And they taste great:)

    Good luck <3!

Carrots, hardboiled eggs, lumps of cheese, tomatoes. Even good old KD can be made healthier if you drop veggies into the boiling water like frozen green beans, peas, chopped onion, garlic powder.

    Try bento.
